Founded by a Ramen Master

INOSHO Ramen was founded in 2006 by renowned ramen master Taisuke Nakamura in the Shakujii area of western Tokyo. Over nearly two decades, Nakamura-san perfected a ramen style that masterfully balances deep umami flavors with a bold kick of spice.

The signature Tonkotsu-Gyokai broth is slow-simmered for a full 48 hours, blending rich and porky tonkotsu with oceanic-umami gyokai — made from a careful blend of dried baby sardines, bonito, and mackerel. This meticulous process creates the deeply layered flavor profile that has earned INOSHO a devoted following across Japan.

With seven branches across western Tokyo and a reputation for bold, flavor-packed ramen, INOSHO has become a staple of the Japanese ramen scene.

From Tokyo to Makati

The idea to bring INOSHO to the Philippines began when Nakamura-san participated in a ramen festival in Makati. The response was overwhelming. "We served Karakarauo Ramen and our tsukemen, and the feedback was fantastic," he recalled.

Two years later, on March 19, 2025, INOSHO opened its first international outpost at 129 Bautista Street, Salcedo Village, Makati City. The concept was carefully adapted to suit Manila's taste preferences while retaining the essence of traditional Japanese ramen.

Leading the kitchen alongside Nakamura-san is Chef Christian Lansang, a rising star in Manila's culinary scene with a background in Michelin-starred kitchens in Tokyo and Sweden. Together, they bring the full INOSHO experience — ramen-ya meets izakaya — to the heart of Makati.
